Without doubt the most romantic place to stay in vegas is the Ritz Carlton at Lake Las Vegas but its a good 30 mins from the strip, on the strip it is either 4 seasons, Wynn/Encore or Bellagio though our personal fave is Mirage. where we started our honeymoon http://vegasuncovered.wordpress.com/2009��
The new M Resort. I stayed there for a weekend with my husband. It is very nice, off the strip. But about 10 mins from the strip, if you feel to head that way. The food was really good. It is new so everything is very nice. The rooms were to die for!! Great big bath tubes that fit 2. Hope this helps!http://www.themresort.com/
On Strip I would choose Venetian/Palazzo or Wynn/Encore. Off Strip I would go to Red Rock Resorts, which is fantastic and locals love it.
The Ritz is probably the #1 way to go. Palazzo, Wynn, aren t far behind.
Circus Circus. You should ask for the motor lodge room with a view of the Adventuredome. There are no kids here. :-)
